As if roasted carrots were not fabulous enough, this ridiculously simple idea made them even better!
CARAWAY CARROTS

Coconut oil (Virgin, cold pressed)
Caraway seeds

1. Slice carrots lengthwise and rub all over with coconut oil
2. Sprinkle with caraway seeds
3. Cook in a moderate oven (180°C/350°F) for 40 minutes
